Red Market Meat, Smoken Butcher and Retro-Diner features Lilybird Ranch beef, exclusively. We know Lilybird Ranch holds a high standard and raises the healthiest beef.
With no chemicals, additives or growth-hormones, these steers are spoiled rotten, well-loved, peaceful-living, stress-free steers. Lilybird Ranch tells them they are going to The Island rather than the processor. It keeps the “fear-of-processing” stress level down!
In taste-tests, this beef consistently out-performed all other ground beef and steaks we tested. Tender, juicy, delicious. And did I mention, lean? Healthy?
On the Butchery side, we will sell beef, chicken and pork. Our butcher is an artisans* who will be training others. We like to give him full freedom to create beef cuts perfected for each customer. We make our own sausages (such as Andouille and Kielbasa) along with beef dogs and pork dogs (no weird parts). We will add in chicken and lamb at some point.
When you visit, you will be offered a free small hamburger (Slider size) as a taste delight for your mouth! Why should you purchase our beef if you don’t know how good it is?
Until the Retro-Diner is up and running, we are working on a small menu such as hamburgers, chili, beef-veggie soup, and BBQ pork sandwiches on homemade buns. We want to advertise recipes featuring our beef. We use unprocessed (milk) cheese, too.
One item we will sell is pre-made hamburger patties in bulk, so all you have to do is toss them on a grill! Our son recommended this as he is too lazy to make a patty on his own and swears there are many people like him.
Once established, on the Retro-Diner side we plan an old-fashioned 50-60’s type diner setting (well, maybe not waitresses on roller-skates chomping gum!). We plan to offer what we consider diner food – our delicious beef in hamburger form; chili (our beef), and homemade corn dogs (our beef dogs with healthy cornbread coating), and kiddie-menu spaghetti (our beef). Notice the trend? Yes, our beef.
We will have other menu options for those who are beef-intolerant such as vegans and vegetarians. We are working on several menu options because we don’t want anyone left out. What we will not ever serve is fake meat. Ever.
We are in the process of creating our own sauces, sugar-free where possible, or a limited amount of raw sugar when necessary. We feature and use Himalayan pink sea salt (and other types such as smoked sea salt) and everything will be as chemical-free as possible.
For those who want less, we will feature light lunch entrées such as homemade soup (wait until you try the beef-vegetable, yum!), entrée-sized baked potatoes with DIY fixings, homemade rolls, and satisfying salads. Greenhouses are in the works so that our vegetables will be as fresh as anyone can ever ask for!
You will want to try our secret bar-b-que sauce (guaranteed to be heaven-sent 😇). A sugar-free one is in the works so everyone can enjoy BBQ sauce without the pesky side-effects of white sugar.
And those sides dishes exclusive to the Retro-Diner? My, my. I can’t tell you yet but they are highly unusual and, well… heavenly!
